Merry Christmas: A Recipe to Celebrate

Santa Claus is coming to town and we are in the Christmas spirit! For all of you who are on the Nice List (Okay and for those who were on the Naughty List, no judgment.), we wanted to share one of our family recipes. This recipe is called Little Gems and is a short bread cookie filled with raspberry jam. We think they are cute as a button (pun intended). Little Gems:
  • 3 Cup Flour
  • 3 Sticks Butter
  • 1 Packet of Dr. Oekter Vanilla Sugar (you can substitute 1-2 tsp Vanilla extract)
  • 2 Egg Yolks
  • 1/8 tsp salt (just a pinch)
  • 1 Cup Sugar
  • Jar of Raspberry Seedless Jam (feel free to try other jam flavors)
First make the cookie dough and let it rest in the fridge for at least 30 min – 1 hour. Preheat the oven to 325-350 degrees. When dough has cooled, roll into small balls. Using a handle of a wooden spoon or your thumb, make an imprint in the middle of each cookie. Finally spoon in the raspberry jam into the middle imprint. Place in oven and cook until the edges are slightly golden brown. Let cool and enjoy! To keep the cookies soft, store them in an airtight container.
